Food Processing: Skinless Longganisa

To make a home-made  Skinless Longganisa  First, you have to prepare the ingredients.

Ingredient:


1 kg ground meat
2 tbsp salt
100 g brown sugar
1/4 tsp MSG (monosodium glutamate)
1/4 tsp prague powder
1 head garlic (minced)
2 tbsp anise-flavored wine
1 tsp black pepper (ground)
3-5 tbsp cornstarch
1/2 cup pineapple juice
platic wrap (for packaging)



Procedures:

  1. In a mixing bowl, mix the dry ingredient (salt, brown sugar, MSG, Prague powder, pepper)
  2. Mix it well, then followed by anise-flavored wine
  3. Put the ground meat to the mixture until it completely corporated
  4. Add garlic, cornstarch and pineapple juice. Mix well 
  5. Add some cornstarch to reach thickness of the product.
For packaging:
  1. Cut the plastic wrap lengthwise, Then cut one piece into three
  2. Place an ample amount of mixed ingredient to one plastic piece the roll it until the mixture elongate equal to the length of wrap.
  3. Repeat the step until it finished.
